How To Make?

    Preheat oven to 400 °F (200 °C), line a baking sheet with parchment, drizzle with olive oil, and season salmon fillet with salt & pepper.

    Top with lemon slices; scatter cherry tomatoes, olives, garlic, onion, capers & fresh herbs around and over the fish.

    Drizzle everything with olive oil, bake for ~20 minutes (adjust based on salmon thickness), let rest 5 minutes before serving.

  • ½ cup Kalamata olives, pitted
  • 3 cups halved cherry tomatoes
  • 1 Tbsp capers
  • ½ red onion & 2 garlic cloves, thinly sliced
  • 3 Tbsp extra-virgin olive oil
  • 1 Tbsp fresh (or 1 tsp dried) rosemary
  • ½ Tbsp fresh (or ½ tsp) oregano
  • ½ Tbsp fresh (or ½ tsp) thyme
  • Salt & fresh ground pepper
